冬令養生!必吃10大健康蔬菜<br /> 華人健康網作者<br /> 在寒風凜冽的隆冬時節,人體需要更多的熱能來維持自身的體溫。人體維生素的重要來源主要是蔬菜,然而,冬季往往蔬菜缺乏,綠葉菜更少,只有大白菜和蘿蔔常見於家庭的餐桌上。大白菜和蘿蔔都是經過了長時間的儲存,其維生素含量有所降低,很難滿足人體的生理需求。為了彌補維生素的不足,合理地食用冬季蔬菜,是非常重要的。<br /> <br /> 合理搭配選用<br /> 冬季,除了選擇食用大白菜和蘿蔔外,還有胡蘿蔔、芹菜以及其他青菜等。在此我們要特別提到的是馬鈴薯。別看馬鈴薯本身不起眼,其實它的維生素和無機鹽含量非常豐富,如果每天食用300公克馬鈴薯,則可為人體提供一天所需的10倍的維生素C和3.4倍的維生素B1。豆類原本不含維生素C,但經發芽成豆芽菜後,就會發生變化。<br /> 比如黃豆發芽後,其維生素C的含量每100公克可高達30毫克以上,並且胡蘿蔔素可增加2倍多,維生素B2也會增加 2.4倍。冬季,綠葉菜不充足,可用各種豆芽菜來彌補維生素C的不足,這個方法最方便,也很經濟實惠。<br /> 合理加工烹調<br /> 冬季,為了減少維生素的流失,蔬菜要先洗後切,並且切後即炒。如果是急炒白菜,則維生素C的損失率只有0.7%,而倘若連炒帶煮,則維生素C的損失率就高達76%。因此,烹調蔬菜時要用急火快炒。<br /> 同時,為了儘量減少維生素C同空氣接觸後遭到破壞的機率,應該在炒菜時加蓋鍋蓋。煮湯時,可在水沸後再放菜,過早放菜會增加維生素C的損失。同一棵蔬菜維生素C的含量,外層菜葉要高於內層,葉部高於莖部;蔬菜要先洗後切,可防止蔬菜切斷面溢出的維生素C因溶於水而流失。<br /> 科學儲存<br /> 冬季,保存蔬菜要把握住適當溫度。蔬菜受冷會被凍壞,而受熱又會萎縮,這樣的情況都會影響到蔬菜內維生素的含量。比如,菠菜在室溫16.25℃的時候,3天的時間,其所含維生素C及B群維生素的損失就會高達85%以上,而胡蘿蔔素也會損失25%左右,但是它在0.3℃的條件下,則損失甚微。因此,蔬菜應該在陰涼通風、溫度較低的地方儲存。<br /> 【冬季10大健康蔬菜】<br /> 冬季氣候寒冷,時令蔬菜不多,但隨著農業技術的進步和人們生活水準的提高,各種原先難得一見的新鮮蔬菜現在也能走上老百姓的餐桌。從食療補養的角度出發,我們篩選出下列10大健康蔬菜,為人們冬季養生提供一些參考。<br /> 健康蔬菜1/大白菜<br /> 入選理由:易於儲藏,營養均衡,含有豐富的鈣、鋅和維生素 C。<br /> 健康蔬菜2/馬鈴薯<br /> 入選理由:營養豐富,易於吸收,低熱能、高蛋白、同時含有多種維生素。<br /> 健康蔬菜3/胡蘿蔔<br /> 入選理由:增強免疫力,防癌,含有豐富的胡蘿蔔素以及多種維生素。<br /> 健康蔬菜4/地瓜<br /> 入選理由:易於消化,可提供大量熱能,可作為主食。<br /> 健康蔬菜5/茄子<br /> 入選理由:為數不多的紫色蔬菜之一,能幫助調節血壓,保護心臟。<br /> 健康蔬菜6/芋頭<br /> 入選理由:增強免疫力,抗癌,高熱能、鹼性蔬菜。<br /> 健康蔬菜7/茼蒿<br /> 入選理由:補脾胃、養心降壓,低熱能,常見的火鍋配菜之一。<br /> 健康蔬菜8/南瓜<br /> 入選理由:調整糖代謝,助消化,美容護膚,含有豐富的維生素 A。<br /> 健康蔬菜9/大陸妹<br /> 入選理由:降低膽固醇,減肥,富含膳食纖維,極佳的配肉蔬菜。<br /> 健康蔬菜10/白花椰菜<br /> 入選理由:提高免疫力,防癌,延緩衰老,含有豐富的維生素 C。<br /> 本文出自人類智庫《24節氣健康養生法》<br /> ========================<br /> 第4、9個 我驚嚇了~(因為我不喜歡吃)<br /> <br /> 健康蔬菜9/大陸妹<br /> 入選理由:降低膽固醇,減肥,富含膳食纖維,極佳的配肉蔬菜。<br /> ..健康蔬菜5/茄子<br /> 入選理由:為數不多的紫色蔬菜之一,能幫助調節血壓,保護心臟
