The basic reason that 台朔牛小排 must be served roasty is because it have to be cooked this way to be delicious. That is why I am interested in the beef's grade. In my opinion, if highly qualified beef is required to make 台朔牛小排 , that is nothing to discuss. Otherwise, the price of 台朔牛小排 that 王品 charges is apparently too expensive.
By the way, as I mentioned, I will not go to 王品 because 聯一 is a much much better restaurant ^_^b
